Veggie Sandwhich

This is one of those go to sandwiches you bring with you to the beach on a warm summer day with a can of coconut LaCroix. It’s packed with veggies, healthy fats and bursting with incredible flavor. Modeled after Board & Brew’s delicious Veggie Supreme, we re-created our own version that you can make at home. Enjoy!

INGREDIENTS/DIRECTIONS:

  • Your favorite bread (We recommend Ezekiel or Dave’s Killer Bread. Macrina, Grand Central, and Wild Wheat Bakery are great local-to-Seattle options.)

  • 1/2 avocado smashed on one side of the bread

  • Everything But the Bagel Seasoning sprinkled across the avocado

  • Your favorite hummus spread on the other side of the bread (We recommend Hope, Roots, or Abrahams. Or you can make your own.)

  • Sliced Tomato

  • Sliced Cucumber

  • Spinach or Romaine

  • Pepper Jack

  • Sliced Red Onions

  • Sprouts

  • Red Wine Vinegar drizzled on inside of the sandwich

  • S&P to taste
