Shrimp Stir Fry
This one was born during one of those “I don’t feel like cooking” nights. I spotted a big bag of shrimp in the freezer and some green beans + bell peppers in the fridge. *Opens Pinterest* I found this recipe but decided to make it my own. This one is so incredibly easy + very tasty.
Shrimp Stir Fry: makes 2 servings
2-3 tbsp Soy Sauce
1 tsp of brown sugar (or coconut sugar)
2 tbsp avocado oil
20 (or so) tail off shrimp
2 handfuls of green beans
2 tbsp Coconut Aminos
1/8 of a white onion chopped
2-3 cloves of garlic chopped
1 red bell pepper chopped or sliced
Sesame seeds (optional)
Salt + Pepper to taste
Jasmine Rice (or any similar kind of grain)
Heat the oil in a wok or frying pan until shimmery.
Add shrimp and cook for 3-4 minutes.
Add green beans and cook for 6-7 minutes.
Add onions, garlic, bell pepper and 1 tbsp of the coconut aminos and cook for 4-5 minutes. (I like to take out a green bean & bell pepper piece and try it to see if it’s ready. Or have my husband try it.)
Add salt + pepper to taste along with the sesame seeds.
Prepare bed of rice, top with remaining tbsp of coconut aminos and add the stir fry on top. Enjoy!
