On The Menu: Greek Chicken Bowls

It’s hard to go wrong with a healthy bowl. Add your grains, greens, protein, veggies and your favorite sauce/dressing and you’re good to go. This bowl is no different. It’s packed with antioxidants, protein, and nutrients. And it’s so absolutely delicious with tasty Greek flavor. Enjoy!

GREEK BOWLS : MAKES 4 SERVINGS

INGREDIENTS:

Chicken, Onions & Peppers:

  • 2 tsp avocado oil

  • 2 cloves garlic chopped

  • 1/2 red onion chopped

  • 1 small sweet onion

  • 1 red bell pepper sliced

  • 1/2 fresh squeezed lemon

  • About 2 cups rotisserie chicken

  • 1/2 tsp turmeric

  • 1/4 tsp onion powder

  • 1/4 tsp garlic powder

Chickpeas:

  • 1 can chickpeas/garbanzo beans

  • 2 tsp avocado oil or olive oil

  • 2 tsp cumin

  • 1/2 tsp turmeric

  • 1/2 tsp salt

Base:

  • Jasmine Rice (or any grain you’d like)

  • Mixed greens (or spinach)

Toppings:

  • Sliced Cherry Tomatoes

  • Chopped Cucumber

  • Avocado

  • Trader Joe’s Avocado Tzatziki dip (or regular tzakziki or plain yogurt)

  • Hummus

  • Pita Bread

  • Salt & Lemon Pepper to taste

  • Fresh squeezed lemon

INSTRUCTIONS:

  1. Heat the 2 tsp of oil in frying pan. Sauté the garlic, onion, & bell pepper. One they’re cooked, add rotisserie cooked chicken with turmeric, onion powder, garlic powder, and salt & pepper to taste. Heat through.

  2. Meanwhile, heat 2 tsp of oil in frying pan or cast iron skillet. One the oil is heated, add chickpeas with cumin, turmeric, and salt over medium heat. Allow to fry up so they get crispy on the outside. (About 15-20 minutes of cooking time.)

  3. Add rice and greens to the bowl. Add the chicken, onions and peppers mixture and the garbanzo beans. Top with cherry tomatoes, cucumber, avocado, tzatziki zip, hummus, fresh lemon, salt & lemon pepper, and fresh squeezed lemon. Enjoy!
