A Side of Greens
Here you have it. One of the easiest and most nutritious sides that everyone will love, filled with all the garlic and all the flavor. Pick up a bundle of rainbow chard at your local farmer’s market (or grocery store). Here’s a guide for those in our home state of Washington. Chances are, you have everything else you need for this recipe already in your cupboard. Chard works wonders for diabetes, bone health, brain boosting, blood circulation, blood pressure, heart health, eye care, healthy hair, and cancer prevention. It’s rich in Vitamin K, A, E & C, and filled with calcium, magnesium, copper, zinc, sodium and phosphorus. Pair this with roasted potatoes and grilled steak or chicken for a delicious summer meal. This recipe serves 2-4 people.
Bundle of rainbow (or swiss) chard chopped
3 cloves of chopped garlic
Drizzles of Olive Oil or Avocado Oil
1/2 tbsp butter Grass-fed Butter (We love Vital Farms.)
1 tsp Red Pepper Flakes
Lemon Pepper to taste
Salt to taste
Prep pan with a drizzle of oil of choice over medium heat. Add chard & garlic and top with another drizzle of oil, lemon pepper, salt, and red pepper flakes.
Stir often to keep from burning. Cook 7-10 minutes. Add butter and let melt. Serve and enjoy!
